Asian Coleslaw

Adpated From Feeding the Whole Family, By Cynthia Lair

Makes 6 servings; Total time: 10 minutes

Ingredients:

  • 3 cups red cabbage, shredded
  • 1 bunch collard greens, chiffonaded
  • 3 Tbsp mayonnaise
  • 2 Tbsp freshly squeezed lemon juice
  • 1 tsp brown rice syrup
  • 1 tsp tamari
  • Freshly ground black pepper

Directions:

1. Combine cabbage and greens in a bowl.  Toss together and set aside.

2. Combine mayo, lemon juice, brown rice syrup, tamari and pepper in a small bowl.  Whisk to combine.

3. Pour dressing over vegetables and toss again.
